Pasta with bacon and parmesan

I love to cook for my family, but unfortunately my family wants something different everyday so I have to come up with meal ideas constantly. That is why I love cooking pasta. It is simple, it is easy and mostly it is delicious. 

So here’s a straightforward and delicious recipe for Spaghetti with Bacon and Parmesan! Simple, easy and delicious❤️. 

Pasta with smoked bacon, garlic and parmesan

Ingredients

  • 250 g (8 oz) spaghetti

  •  Salt (for pasta water)

  • The Sauce
  • 150g (5 oz) smoked bacon, diced

  • – 2 tablespoons oil (optional, especially if the bacon is very fatty)

  •  – 2-4 cloves garlic, minced

  •  – 100g (1 cup) grated Parmesan cheese, plus extra for serving

  •   – Freshly grounded pepper to taste

 Instructions:

Cook the Pasta

   – Bring a large pot with water to a boil, and add a teaspoon with salt. Add the spaghetti and cook according to the  package instructions until “al dente”. Reserve about 1 cup of pasta water, then drain the pasta. Or you can use a pasta claw spoon ( spaghetti server) and just take the pasta out of the boiling water and set aside the the remaining water. 

Cook the Bacon

In a large pan over medium heat, cook the sliced bacon  until crispy (about 7-10 minutes). If the bacon is very fatty, you can drain some of the fat, leaving about 1-2 tablespoons in the pan.

Add Garlic 

Add the minced garlic to the pan with the bacon and cook for about 1 minute, until fragrant or until you can see the color changing from white to brownish. Be careful not to burn the garlic, because it will taste bitter. 

Combine the Pasta and the Sauce

   Add the spaghetti to the pan and toss to combine with the bacon and garlic. If the mixture appears dry, add some reserved pasta water a little at a time until you reach your desired consistency. You can see a sauce forming while you add the water.

Add the Cheese ( parmesan ) 

   Remove the pan from heat and stir in the finely grated Parmesan. Toss until well combined. The heat from the pasta will help melt the parmesan, creating a creamy texture to the sauce. Season with freshly grounded pepper to taste ( I like using the 3 color pepper, black-white-red)

   Plate the spaghetti and garnish with additional Parmesan.

This Spaghetti with Bacon and Parmesan is a quick and satisfying dish that’s perfect in my opinion for any weeknight dinner.
