Pasta Puttanesca

Ingredients:


– 300g spaghetti or your preferred pasta
– 3 tablespoons olive oil

-2 medium size onions diced 
– 4 cloves garlic smashed 
– 1 can (400g) diced tomatoes, or tomato juice (400 ml)

– 4 anchovy fillets, chopped (optional)
– 1/2 cup black olives 

-1/2 cup sliced Kalamata  olives
– 2 tablespoons capers 
– Fresh parsley, chopped (for garnish)
– Salt and pepper (to taste)

Instructions:


1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until “al dente”. 

2. Prepare the Sauce: In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5-7 minutes. Add the garlic and sauté for an additional minute until fragrant. If using anchovies, add them now and cook until they dissolve.


3. Add Tomatoes and Seasonings: Stir in the diced tomatoes, olives, and capers. Let the sauce simmer for about 10-15 minutes, allowing the flavours to meld. Season with salt and pepper to taste.

4. Combine Pasta and Sauce: Add the drained pasta to the pan with the sauce. Toss to combine

5. Serve: Garnish with fresh parsley and serve hot.
